What am I… Chopped Liver?

  • rena

LOVE it! totally making it! WHERE are the bloopers???

    • Andrea

No bloopers… there is nothing funny about chopped liver! 🙂 Actually, there really weren’t any bloopers on this one. Imagine? But, in next months video (we already shot it) …we have a monkey in the kitchen.

  • Hey Andrea,
Awesome videos! Quick question, I have a organic grass fed beef liver sitting in my freezer, could I essentially use the same recipe even though it’s a larger size liver and just serve small portions? Thanks

    • Andrea

Thanks Renee! Yes, you could essentially do the same thing with the beef liver. Except I would use more onions/shallots (and more of everything), because the beef liver is bigger. Let me know how it turns out.

  • Who else can make chicken liver gorgeous. Love it!

    • Andrea

Thanks Hannah. It tastes as good as it looks!

  • Zeke

I love liver too! But your close-up herb shot is actually lavender which probably tastes good with liver too!

    • Andrea

Funny! Actually, it really is thyme. I took the photo myself. I wonder how lavender would taste with liver? Interesting. Maybe it’s time to experiment. Thanks for the inspiration, Zeke.

  • Vicki

Love the video and recipe! This Italian girl from Brooklyn had a Jewish mama who made liver. Great memories; great nutrition!

    • Andrea

Thanks Vicki! If your mama’s still here, give her a hug. By cooking for you, she showed that she totally loved you.

  • You rock Andrea. One of my favorite foods and so I am very excited to see your recipe.

    • Andrea

Wow! I’ve never heard anyone say that liver is one of their favorite foods. Miles of smiles over here. Love your palate, Rachel.

  • Denise

I usually feed chicken liver to my cat! You make a persuasive arguement though and I may have to try this one for myself, sorry Nina! 🙂

    • Andrea

That is one lucky and well-fed cat!

  • Lauren

Thanks Andrea! I have been trying to get myself to eat some chopped liver during pregnancy (I’m 27 weeks), but every time I buy it, I can’t bring myself to eat it! Darn food aversions!!! Maybe I’ll just have my grandma make me her chopped liver. It’s always better from bubbie, right? 🙂

    • Andrea

Yes, if your Bubbie is still here then definitely have her make you some chopped liver. She’s going to add in extra “love.” Congrats on your pregnancy!

  • Hi Andrea
Just wanted to let you know I made the recipe for chopped liver, but with beef liver. It was awesome! My first time eating liver, we got it from the farm we belong to and it’s been sitting in my freezer for a month, so happy to have found something yummy to do with it! Looking forward to many more liver dinner’s (actually we used it as an appetizer keeping the serving size small).
    Thanks! Renee

    • Andrea

Yay! I’m so happy you enjoyed the liver! And, I’m happy you used it as an appetizer. Small quantities is best for both flavor and enjoyability 🙂

    • Alicia

So glad to hear this! I was about to post and ask Andrea if this recipe works with beef liver as well because I can’t get my hands on good quality chicken liver at the moment but found some beef liver at the farmer’s market. Thank you for sharing!

  • Just made this, but I mashed it until creamy and served on rice crachers (gluten free). Wow! My husband loved it even though he was grossed out watching the process. Thanks Andrea, I now have an inexpensive nourishing snack.

    • Andrea

Yay! I love that you and your hubby have a new yummy snack. He’s in good hands with you in the kitchen.

  • Denise

I had to come back to share that this is the FIRST TIME EVER that I’ve eaten chicken liver and ENJOYED IT! I tried the recipe initially and it was okay, much better than past attempts, but I had to improvise a little with some things (no chicken stock, think I used onion in place of shallots). Tonight I followed the recipe identically except I used white wine and a sourdough bread. It was DELICIOUS! I had to fight really hard not to eat it all and save some for my husband (he was at work). When he tasted it, he didn’t want to share. LOL. He looked at me rather accusatory and asked how much had I eaten. We will definitely make it again. He didn’t even realize it was chicken liver till I told him. For some reason this really didn’t have the typical chicken liver after taste at all.

    • Andrea Beaman

LOVE, LOVE, LOVE that story! Sending you and your hubby a big healthy hug! Thank you for sharing.

  • I can’t wait to try this recipe! Hmm, now where to find chicken liver? ;o)
