Turnip, Beet and Carrot Hash

 

  • 1 large turnip (or potato)
  • 1 large sized beet
  • 2 carrots
  • 2 scallions, minced
  • 2-3 tbsp. butter
  • 1/4 tsp. Sea salt

Directions

  1. Wash the vegetables (turnip, beet and carrots).
  2. Use a food processor to shred the vegetables. Or, use a cheese grater to shred the vegetables.
  3. Combine scallions with shredded vegetables and season with 1/4 tsp. sea salt.
  4. Heat a frying pan and add butter.
  5. Add shredded vegetables into the frying pan and fry 10-12 minutes.

    This looks yummy. I’ll have to try it out when I get back from travels. Only I will use olive/sesame oil blend for the frying pan.
