Braised White Beans and Escarole

  • 1 cup white cannelini beans (or great northern beans), soaked overnight
  • 3 cups water
  • 2 bay leaves
  • 1 tsp. olive oil
  • 2 garlic cloves, peeled and minced
  • 1/2 head escarole, cleaned and chopped
  • 1/2 cup water
  • 1/2 cube vegetable boullion or other seasoning
