Garlicky Sauteed Vegetables

Water sauté carrots in a frying pan 1-2 minutes. Add collard greens, cabbage, and a couple of pinches of sea salt. Cover and cook 3-4 minutes or until vegetables are tender and bright. Add garlic and olive oil, toss and cook 1-2 minutes.

Roasted Garlic and Cauliflower Puree

  • 1 tbsp. butter
  • 1 leek, cleaned and chopped
  • 1 head cauliflower, broken into florets
  • 1 medium potato, peeled and quartered
  • 5 cups water (or veggie/chicken stock)
  • 1 tsp. sea salt + 1/4 tsp. black pepper

Creamy Squash Soup

  • 5 cups water (or chicken or veggie stock)
  • 1 onion, peeled and chopped into chunks
  • 2 butternut squash, peeled and deseeded
  • 1 tbsp. ginger, peeled and diced
  • 1 tsp. sea salt
