  • 1 leek, cleaned and chopped
  • 3-4 garlic cloves, peeled and diced

  • 1/2 tbsp. grass-fed butter
  • 1 tbsp. olive oil
  • 2-3 yellow summer squash, cut into quarter inch thick rounds

  • 3-4 cherry or grape tomatoes, whole or halved

Potato Leek Soup

  • 1 tbsp. olive oil
  • 2 leeks, cleaned,¬†and chopped (use both the white and green)
  • 1 tbsp. grass-fed butter
  • 3-4 medium sized potatoes, peeled and quartered
  • 5 cups chicken stock, vegetable stock or water
