- 2 lbs. stone fruit (peaches, plums, cherries, nectarines, mangoes, etc.)
- 2 scallions, minced
- 1/4 cup cilantro, chopped
- 1 tsp. ginger, peeled and minced
- 1 garlic clove, peeled and minced
- Juice of 1 lime
- 1 tsp. raw local honey (optional)
- 1/4 tsp. sea salt
Choose a variety of your favorite stone fruit. Remove the drupe (pit), and discard. Dice the fruit and place into a mixing bowl. For the recipe above I used peaches, plums and cherries. Add the scallions and cilantro and toss. Combine ginger, garlic, lime, honey, and sea salt. Pour into the bowl and toss all ingredients. Enjoy this salsa on salad, or pair with your favorite chips.
