Savory Mushroom and Herb Frittata


  • 1 tbsp. olive oil
  • 1 medium red onion, peeled and diced
  • 5 shitake mushrooms, sliced thin, (discard stems)
  • 5-6 cremini mushrooms, sliced thin
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried tarragon
  • 1/4 tsp. sea salt
  • 2-3 tbsp. grass-fed butter
  • 7-8 eggs, whisked
  • Fresh Chives, minced

Preheat oven to 350 degrees. Saute onion, mushrooms and olive oil in an oven safe pan. Cook on medium/low heat until the onions are translucent and mushrooms are wilted (5-7 minutes). Add herbs, sea salt and butter. After butter melts, add the whisked eggs. Cook on top of the stove for 2-3 minutes and then place into the oven for 10-15 minutes or until eggs puff up. Garnish with freshly minced chives.
