Andrea_quinoa_tabouleh[1]

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 pinch sea salt
  • 1 tomato, seeded and diced
  • 1 small cucumber, seeded and diced

Bring quinoa and water to a boil.  Add a pinch of sea salt, lower flame to simmer, cover and cook for 12-15 minutes.  In a mixing bowl, combine quinoa with diced tomatoes and cucumbers. Toss with Cilantro Pesto.

Cilantro Pesto

  • 1 bunch cilantro, cleaned
  • 1-2 inches ginger, peeled and minced
  • 1/2 cup olive oil
  • 1/4 cup rice vinegar
  • 1/2 tsp. sea salt

Combine all ingredients in a food processor or blender.
