Pablo’s Gluten Free Date & Almond Bread

2 cups almond flour
1 tsp. baking soda
¼ tsp. sea salt
2 pastured or organic eggs
1/4 cup coconut oil
3 tbsp. butter
4-5 medjool dates, diced
Cinnamon

Preheat oven to 350°

Combine almond flour, baking soda and sea salt.

In a separate bowl whisk eggs, coconut oil and butter (melt the butter before adding to the bowl)

Combine wet and dry ingredients and add dates.

Grease a bread pan with coconut oil.

Pour batter into the greased bread, dust the top with cinnamon, and bake 40-45 minutes.

    Could this be made without the butter for a dairy free version or would it change the taste or texture?

    • I guess you could try coconut oil. Let me know how it turns out.
