If you don’t have the time or energy to deal with multiple pots and pans to prepare dinner, I’ve got the perfect dish for you: One Dish Chicken Dinner.
All you need is a 9×13 casserole dish or baking pan, and your ingredients.
For this recipe, I used carrots and potatoes. Sometimes I’ll add onions and fennel, too. It all depends on what I have in the fridge.
The idea with this dish is that you would lay the vegetables underneath a seasoned spatchcocked chicken, or you can use parts and pieces of chicken.
As the chicken cooks, the fat and juices drip down onto the vegetables, making them so savory and delicious. It’s crazy good!
And, the best part is… it’s all done in one dish. So, it makes for an easy breezy cleanup.
If you’re wondering what is a “spatchcocked” chicken, it’s when you remove the backbone of the chicken and lay the chicken flat in the pan. Here’s a tutorial: Spatchcock Chicken
Enjoy the dish!

- 5 medium sized yukon gold or other potatoes, cleaned cut into 1-2 inch pieces
- 3 carrots, cut into 1 inch thick rounds
- 1 whole chicken (or pieces of one whole chicken)
- Olive oil
- 1 tsp. dried rosemary
- 1 tsp. Sea salt
- ½ tsp. Black pepper
- 1 tsp. cumin
- 1 tsp. smoked paprika
- ½ tsp. cayenne pepper
- Preheat oven to 400 degrees.
- Lay a piece of parchment paper into a 9x13 baking dish.
- Add potatoes and carrots into the dish and season lightly with a drizzle of olive oil, rosemary, sea salt and pepper.
- Combine sea salt, pepper, cumin, paprika and cayenne pepper.
- Drizzle olive oil onto chicken and cover with seasoning.
- Place into the oven and roast uncovered for 45-50 minutes.
- Baste the chicken with chicken juices 1x halfway during the cooking process.
