If you’re suffering from digestive woes (gas, bloating, reflux, constipation), rotate this morning porridge into your breakfast routine.
The gut needs fiber and mucilage to function optimally and this breakfast cereal contains both; fiber from the oats and fenugreek seeds and mucilage from the slippery elm and flax seeds.
Grains, like oats, need to be processed properly and that means soaking them.
I soaked these oats in an acid-medium (goat kefir) to neutralize the anti-nutrients, and make the oats way more beneficial to health.
If you find that the kefir makes the oats taste too sour, sweeten the porridge with honey or maple syrup. If you don’t eat dairy, simply soak them in water.
And, if you do not like oats, swap them out with any other cooked grain instead (brown rice, cracked wheat, quinoa, or buckwheat).
Enjoy this gut-healing porridge and send your belly some fiber, mucilage and love!
- 1 cup rolled oats (or 1 cup cooked brown rice)
- 2 cups water
- 1 tsp. fenugreek seeds
- ¼ tsp. ground cinnamon
- ½ cup fresh berries (or ¼ cup dried)
- 1 tsp. slippery elm powder
- ¼ tsp. sea salt
- 1 tsp. ground flax seeds
- 3 tbsp. yogurt, or kefir
- Put oats, water, fenugreek and 1 tbsp. yogurt or kefir into a pot.
- Let it sit, covered, overnight.
- In the morning, add more water if needed, cinnamon, berries, slippery elm, water and sea salt.
- Bring to a boil.
- Lower to simmer and cook 5 minutes.
- Top with ground flax seeds and 1-2 tbsp. kefir or yogurt.
- Garnish with fresh berries.
