During the summer months, the fruit share I purchased from my community supported agriculture (Stoneledge Farm), provides me with way more peaches than my family and I can eat before they start to break down.
The peaches you purchase in the grocery store are often picked unripe – that’s why they often get mealy and don’t taste very sweet.
But, the peaches I get directly from the farm are picked at the peak of ripeness. They are bursting with juicy sweetness that dribbles down your face when you take a bite!
Peaches are delicate fruits with a thin skin, so they don’t last long after they’ve ripened.
So, what can I do with all of the sweet peaches before they decay?
Make a yummy peach cobbler, of course!

- 6-7 ripe peaches
- 1 tsp. vanilla extract
- ¼ cup sugar
- 1 cup all purpose flour
- ⅓ cup maple sugar (or other sugar)
- 1 tsp. baking powder
- 2 dashes ground cinnamon
- ½ tsp. sea salt
- 6-7 tbsp. unsalted butter
- Ice cream (optional)
- Preheat oven to 375°.
- While oven is heating, bring a pot filled with water to a boil.
- With a sharp paring knife, score the bottom of the peaches with a shallow X.
- Drop the peaches into the boiling water for 30-60 seconds.
- Remove the peaches from the water, peel the skin off and discard.
- Slice into the peaches, from top to bottom, around the pit into ½ inch thick slices.
- The slices will be easy to peel away from the pit.
- Put peaches into a mixing bowl and add vanilla, sea salt and sugar.
- Place peaches into a buttered, 9x9 baking dish or casserole dish.
- In a separate bowl, combine flour, sugar, baking powder, cinnamon, sea salt and butter.
- Work butter into the flour until it resembles crumbly texture.
- Sprinkle crumbles on top of peaches.
- Bake 40 minutes or until fruit is bubbling and crumble is nicely browned.
- Top with a dollop of whip cream or your favorite ice-cream.
