Sweet and Savory Roasted Hokkaido Pumpkin

  • 1 hokkaido pumpkin (can use squash or pumpkin)
  • 1 tsp salt
  • ΒΌ tsp. black pepper
  • Olive oil
  • Rosemary, minced
  • Thyme, minced
  • Nutmeg
  • Cinnamon
  1. Preheat oven to 375.
  2. Open the pumpkin and remove all the seeds (save seeds and roast them!).
  3. Cut pumpkin into thin slices and put into a large mixing bowl.
  4. Sprinkle with olive oil, salt, pepper, rosemary, thyme, nutmeg and cinnamon, and toss.
  5. Line a roasting pan with parchment paper and add pumpkin.
  6. Roast 45 minutes or until lightly charred.
