Savory Miso Soup

Serves: 4 servings
  • 5-6 cups fish stock (can use Dashi broth or water)
  • 8 ounces extra firm tofu, cubed
  • 3-4 inches of dried wild atlantic kelp (soaked in cool water and sliced thin)
  • 3-4 scallions, minced
  • 4 tbsp. sweet white miso or chickpea miso
  1. Bring stock, tofu, and kelp to a boil.
  2. Reduce heat and simmer 2 minutes.
  3. Dilute miso in a small amount of warm water and add to the pot.
  4. Continue cooking 2-3 minutes.
  5. Garnish with fresh scallions.
