Blistered Shishito Peppers

Serves: 2 servings
- 1 pint of green shishito peppers
- 2 tbsp. organic peanut oil (or other high-heat oil)
- Sea salt
- Turn the oven on to the "broil" setting.
- Coat peppers in peanut oil and season with one or two pinches of sea salt.
- Place peppers into a cast-iron skillet.
- Broil 3 minutes on one side.
- Remove from the oven, turn the peppers with tongs (remember the pan is HOT!).
- Put back into the oven for 2-3 minutes.
- Done!
- Enjoy as is or with your favorite dipping sauce.
