Blistered Shishito Peppers

  • 1 pint of green shishito peppers
  • 2 tbsp. organic peanut oil (or other high-heat oil)
  • Sea salt
  1. Turn the oven on to the "broil" setting.
  2. Coat peppers in peanut oil and season with one or two pinches of sea salt.
  3. Place peppers into a cast-iron skillet.
  4. Broil 3 minutes on one side.
  5. Remove from the oven, turn the peppers with tongs (remember the pan is HOT!).
  6. Put back into the oven for 2-3 minutes.
  7. Done!
  8. Enjoy as is or with your favorite dipping sauce.
