Summer Vegetable Salad with Feta Cheese

  • 1 red onion
  • 1 red tomato
  • 1 yellow tomato
  • 1 green pepper
  • 1 fennel bulb
  • ¼ cup feta cheese, crumbled
  • 1 tbsp. fresh oregano (or 1 tsp. dried)
  • ¼ cup extra virgin olive oil
  • 1 tbsp. lemon juice
  • 2 tbsp. white wine vinegar
  • Sea salt
  • Freshly ground black pepper
  1. Peel the onion and slice in half. Then slice into thin crescents and place into a large salad bowl.
  2. Dice the tomatoes and put into a colander with a pinch of salt, and let the excess liquid drain out for a few minutes, and then add the tomatoes into the salad bowl.
  3. Seed the green pepper and chop into 2-3 inch pieces. Add pepper into the salad bowl.
  4. Cut off the outer portion of the fennel bulb and discard. Dice remaining bulb into bite-sized pieces and add to the salad.
  5. Add feta cheese into the salad.
  6. In a small mixing bowl combine olive oil, lemon juice, white wine vinegar and oregano. Season with sea salt and black pepper.
  7. Pour dressing onto salad and toss lightly.
  8. Enjoy!
