Baked Cod with Miso Ginger Marinade

  • 3 tbsp. sweet miso
  • 3 tbsp. organic mirin cooking wine
  • 1-2 tsp. grated ginger juice
  • 2 tbsp. tamari
  • ¼ cup water
  • 4, six oz fillets Black Cod (Sable)
  • Scallions, minced
  1. Combine miso, mirin, shoyu, ginger and water.
  2. Marinate fish fillets 35 minutes or overnight in the refrigerator.
  3. Preheat oven to 375°.
  4. Place cod into a baking pan with the marinade on top of the fish.
  5. Bake 10-15 minutes (approximately 10 minutes per inch of thickness).
  6. Remove fillets from the oven and set onto a plate.
  7. Garnish with scallions.
