Marinated Shrimp Salad

  • 1 pound medium-sized shrimp, peeled
  • 1 shallot, peeled and diced
  • 1 cucumber, seeded and diced
  • 1 medium tomato seeded and diced
  • 1 jalapeno pepper, seeded and diced (or serrano pepper)
  • 2 tbsp. fresh cilantro, minced
  • ¼ cup organic olive oil
  • Juice of 2 limes (zest of 1 lime)
  • ⅛ tsp. sea salt
  1. In a pot of salted boiling water, drop shrimp in for 1 minute.
  2. Remove shrimp from the boiling water and drain in a colander.
  3. In a large bowl combine shrimp, shallot, cucumber, tomato, pepper, and cilantro.
  4. Whisk olive oil, lime juice, and sea salt.
  5. Pour dressing on top of shrimp and vegetables.
  6. Mix thoroughly and marinate 25-30 minutes or overnight (in the fridge).
