Date and Walnut Truffles

Preheat oven to 350. Place raw walnuts onto a roasting pan. Cook 10-12 minutes or until lightly brown and toasted. Pulse walnuts in a food processor until finely minced.  Chop the dates into small pieces. In a mixing bowl combine walnuts, dates and add vanilla flavoring.  Form into small balls and roll in shredded coconut.  Chill until ready to eat.

These are amazing! Never guessed roasting walnuts would give this such a toasty flavor which was an added bonus. Simply sweet and just one feels like you ate a whole piece of cake—-without doing it!

    • @Con – I’m happy you enjoyed the dessert. I like the way you described it… “like you ate a whole piece of cake— without doing it.” Cute!

Can’t wait to try these. Thanks for sharing!

  • Love to Eat Healthy

I going to try them last night and got sidelined by a gluten free pancake (bananas 1 eggs 2 only — sorry but someone would ask) – This looks like one of the most delicious healthy treats I’ve seen in a long, long time. Then the review of “like you ate a whole piece of cake . . . ” has my mouth watering…the ingredients are like the cream of the crop of the best cake recipes…without all the gunky fillers. Can’t wait. Additionally, if I love this the way I imagine I think I will experiment and use something other than vanilla extract. Perhaps orange zest or….?
