Summer time is salad time!
This crisp, crunchy and simple summer salad was inspired by my local CSA veggies.
My farmer dropped off some Nappa cabbage, red radishes, cilantro and jalapeno peppers for my weekly haul.
So, get out to your local market, or join a CSA, grab these veggies, chop em’ up, drizzle on a light dressing and enjoy.
It’s simple, refreshing and totally delish!
- 1 head Nappa cabbage, chopped
- 4-5 red radishes, sliced thin
- 1 jalapeno pepper, seeded and sliced thin
- ½ red bell pepper, seeded and sliced thin
- ¼ cup cilantro, chopped
- 2 tbsp. organic white wine vinegar
- Sea salt
- Freshly ground black pepper
- ¼ cup organic extra virgin olive oil
- Chop all of your veggies and put into a large salad bowl.
- Combine vinegar, sea salt and black pepper (to taste).
- Whisk in olive oil.
- Coat salad evenly and enjoy!
