Creamy Tomato Soup with Roasted Garlic and Miso

On a cold blustery March day I was visiting friends in Brooklyn and stopped by a popular grocery – Court Street Grocers.  They are well known by the locals for their unique and delicious sandwiches.

But, it was cold outside and all I really wanted was soup to warm my bones!

They had only ONE option on the menu – it was a Creamy Tomato Miso Soup. At first, I wasn’t interested.

The umami flavor (miso) combined in an already umami soup (tomatoes with cream), didn’t call to me. But, I ordered it anyway and gave it a try.

Holy cow, it was totally delicious!

I let my husband taste it and he said, “Wow, that soup has a lot of cheese in it.”

I said, “No, it’s not cheese. It’s miso!”

As soon as I got home, I got to work recreating it.

Below is my version of a Creamy Tomato and Roasted Garlic Soup with Miso. It’s a triple whammy of umami that’s sure to satisfy you. Learn more about the Umami flavor here: Do You Crave Umami?

Big thanks to the Court Street Grocers for this yummy inspiration!
