Cream of Broccoli

  • 2 tbsp. grass-fed butter
  • 1 onion, peeled and chopped
  • 4 cups vegetable stock, chicken stock or water
  • 2 broccoli heads, florets and stems (cut into chunks)
  • 3 garlic cloves, peeled
  • 1 medium potato, diced
  • 1 tsp. sea salt
  • Freshly ground black pepper

Saute onion and butter in a soup pot until onion wilts. Add stock, broccoli, garlic, potato, and salt. Bring to a boil. Cover and reduce heat to simmer for 10-15 minutes. Remove vegetables from the pot and puree in a food processor or blender. Add back to liquid and adjust seasoning if needed.
