Avocados are all the rage in the wellness world. They are rich in:
- Monounsaturated fats that help the body absorb fat soluble vitamins A, D, E and K
- Magnesium and potassium for muscle support
- Lutein and zeaxanthin that protects eye health

But, I don’t eat them daily because I live in a place where Avocados don’t grow.
To best support my endocrine system and microbiome, I mostly eat seasonal foods from my local farmers. Learn more about that here: Are you confusing your body with the wrong foods.
With that being said, I do enjoy an avocado treat a couple of times per week.
Avocados are totally delicious, and awesome on tacos, in a salad, or with eggs.
Below is one of my favorite ways to eat these creamy little tropical delights.

- 1 whole ripe avocado
- 1 tbsp, lemon or lime juice
- Sea salt
- 1 piece of sourdough or whole grain bread
- Butter
- 1-2 eggs per person
- Cut avocado in half and remove pit.
- Slice the avocado flesh into cubes, without cutting through the skin.
- With a spoon, scoop out the cubes and place into a mixing bowl.
- Add 1 tbsp. lemon juice and a couple pinches of sea salt.
- Mash with a fork, but don’t over-mash it.
- Let the avocado retain some of its body.
- Toast your bread.
- While the bread is toasting, cook your egg(s) in a frying pan.
- Smear the avocado onto the toast and top with your egg.
- Season with flaky salt and pepper.
