- 1 large head cauliflower
- 2 tbsp. olive oil or coconut oil
- 2-3 tsp. curry powder
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
Preheat oven to 375. While the oven is heating, chop the cauliflower into florets. Place florets into a large mixing bowl and coat evenly with olive oil. Sprinkle in half the curry powder, sea salt and black pepper. Toss the cauliflower to coat. Sprinkle in remaining curry powder, sea salt and black pepper, and toss again to coat. Place the cauliflower into a baking pan or on a roasting tray. Bake, uncovered for 20-25 minutes. Using a pair of tongs, turn the cauliflower pieces. Place cauliflower back into the oven for an additional 20-25 minutes, or until caramelized and browned.
