Bravado Black Bean Burritos!

  • 1 tbsp. olive oil
  • 1 onion, peeled and diced
  • 2 garlic cloves, peeled and minced
  • 1 red pepper, seeded and diced
  • 1 tsp. cumin
  • 2 shakes of cayenne pepper
  • 1 jalapeno pepper, seeded and diced
  • 2 cups cooked black beans
  • 1 cup cooked brown rice
  • Sea Salt
  • Black Pepper
  • 3 tbsp. cilantro, minced
  • Sprouted Whole Grain Tortilla’s or Burrito wraps

Saute onion and garlic in olive oil for 2-3 minutes with a couple of pinches of sea salt.  Add red pepper, cumin, cayenne pepper, and jalapeño pepper and cook 2-3 minutes. Add black beans and rice, adjust seasoning (sea salt and black pepper) and cook additional 4-5 minutes. At the end of cooking, toss in a  handful of minced cilantro.  Warm a wrap in a dry pan. Lay the wrap flat and add the black bean mixture. Roll up and enjoy!
