Baked Cod with Tomatoes and Capers

If a dish is easy to prepare and cooks in 20 minutes or less, people will be more likely to make it.

Voila! Here’s that dish…

All you need are some simple ingredients that you may already have in your kitchen:

  • Canned tomatoes
  • Capers (or olives)
  • Olive oil (plus a couple of pats of butter – optional)
  • Lemon juice
  • Onion
  • Cod
  • Old Bay seasoning

I always keep some type of fish frozen in my freezer, so I had cod on hand.

If you don’t have any frozen fish most, if not all, fish mongers carry cod. It’s a very reasonably priced, quick cooking fish.

Cod is high in protein and low fat – it’s a light, lean, clean tasting fish with a mild flavor.

Simply lay all of the ingredients into a baking dish and bake on 400 for 15-20 minutes.

If you have a thick piece of cod, remember to cook it for 10 minutes per inch of thickness.

For example, the cod I used was about 1 & ½ inches thick, so I baked it for 15 minutes.

  • 2 pounds cod
  • 1-2 tsp. old bay seasoning
  • Juice of one lemon, plus zest
  • 1 14-oz can crushed tomatoes
  • 2 tbsp. capers
  • 1 onion, peeled and diced
  • Parsley
  1. Preheat oven to 400.
  2. Dry and season the cod with old bay seasoning.
  3. Arrange the cod in a baking dish.
  4. Squeeze lemon juice over the cod.
  5. Top with tomatoes, onion, capers, and lemon zest.
  6. Drizzle with olive oil.
  7. Bake 15-20 minutes.
  8. Garnish with fresh parsley.
