Spring Salad

  • 4 cups mixed baby greens (mustard, kale, baby lettuces)
  • 1 cup sunflower sprouts (or other sprouts)
  • 2 tbsp. apple cider vinegar
  • 1/4 cup olive oil
  • 1-2 tsp. local honey
  • 2 tsp. grated horseradish root
  • 1/8 tsp. sea salt
  • Black pepper

Wash lettuces and sprouts and place into a large salad bowl. Whisk vinegar, oil, honey, horseradish and sea salt, plus a dash of freshly ground black pepper. Drizzle dressing on top of greens and toss.
